My Story

Di, the mastermind behind Di’s Gluten Free Delights, isn’t just a baker; she’s a magician transforming the world of gluten-free desserts.

I’ve always enjoyed baking.  Learning how to make something from scratch always piqued my interest especially coming from an Italian background.  Watching my parents and extended family make pasta or cakes always had me in the kitchen watching, learning, and doing.  Fast forward to 2022 when due to health reasons I decided to go gluten free.  Even though I don’t have Coeliac Disease, I do have extended family that do.  I began to realize how challenging it was for Coeliac or Gluten Intolerant people, so I started experimenting and changing recipes to be gluten free, much to the enjoyment of my family and friends as they became my taste testers.  Seeing the look on their faces and the reaction to how delicious it all tasted filled me with so much joy.  Don’t get me wrong, there were plenty of fails along the way but that’s all part of learning, it just made me try harder to get it right.

It still amazes me when people hear it’s ‘gluten free’ that they automatically think it will be flavorless.  I wanted to change that narrative and so here I am.  I decided to take the plunge and open Di’s Gluten Free Delights.  I hope you enjoy every bite just as much as I enjoy baking it for you!
